Healthy Baked Goods for Your Summer Figure

With swimsuit season at its peak, we all start to look for some healthy alternatives wherever we can. However, with summer desserts and snacks lining the tables at outdoor parties it can be hard to resist the temptations – especially when there are homemade goodies. So, from one struggling snacker to another, these are some healthy baked goods (All under 170 calories!) to help you through the summer.

 

Skinny Banana Bread

This Banana Bread recipe is from Tastes Better From Scratch, and is not only one of the best healthy options for a loaf, but is one of the moist delicious. It is subtly sweet and incredibly moist with a touch of cinnamon. It’s a great selection for breakfast or dessert. This recipe makes one loaf, which when you size it out will be about 12 slices – each at 137 calories.

The Recipe

Prep Time: 10 Minutes Cook Time: 35 Minutes Total Time: 45 Minutes

Ingredients:

4 mashed bananas

1 egg

1 Tbsp. vanilla

3 Tbsp. brown sugar

2 Tbsp. granulate sugar

1 tsp. ground cinnamon

1 tsp. baking powder

1 tsp. baking soda

½ tsp. salt

1 ½ cups of flour

2 Tbsp. unsalted melted butter

 

Instructions:

  1. Begin by heating your oven to 350 degrees.
  2. Prepare a 9×5 loaf pan (a disposable tin works too) with Pam or non stick grease.
  3. Mix the bananas, egg, vanilla, brown sugar, granulated sugar, and cinnamon into a large bowl.
  4. In a separate bowl combine the flour, baking powder, baking soda, and salt.
  5. Then mix the dry ingredients into the large bowl with the bananas.
  6. Add in the melted butter and stir.
  7. Pour mixture into pan and bake for 35-45 minutes and allow to cool.

 

Apple Cinnamon Muffins

This recipe by Living Loving Paleo is a great to-go snack and the perfect breakfast. These Apple Cinnamon Muffins are the perfect balance of sweetness and crisp apple taste. They are entirely paleo – which means they exclude dairy, grains, starch, and processed sugar. Basically you can feel really good about eating them and not splurging. These guys come in at 160 calories each with only 4 grams of sugar.

The Recipe:

Prep Time: 15 Minutes Cook Time: 25 Minutes Total Time: 40 Minutes

Ingredients:

½ cup of coconut flour

1 ½ tsp. cinnamon

1 tsp. baking soda

½ tsp. sea salt

4 eggs

¼ cup of melted and cooled ghee

½ cup full fat coconut milk

¼ cup honey

2 tsp. vanilla

1 tsp. apple cider vinegar

1 cup of peeled and diced apples (1 large apple)

 

Instructions:

  1. Begin by heating your oven to 350 degrees and lining a muffin pan with parchment paper.
  2. Dice up 1 cup of peeled apples – using apple types according to your sweetness needs.
  3. Mix the eggs, ghee, coconut milk, honey, vanilla, and apple cider vinegar into a large bowl.
  4. In a separate bowl combine the coconut flour, cinnamon, baking soda, and seas salt.
  5. Then gradually mix the dry ingredients into the large bowl with the wet ingredients.
  6. Add in the apples and stir.
  7. Pour mixture into the muffin pan and bake for 25-30 minutes and allow to cool.

 

Gluten Free Lemon Bars

Lemon Bars with only 7 grams of sugar? Sign me up! This Lemon Bar recipe is by Veggie Balance and is the bee’s knees when it comes to healthy treats. These bars are gluten free – meaning they are perfect for a kid class snack or a poolside dessert. The sugar and butter are slimmed down to create a more appropriate calorie count. Coming in at just 132 calories, these bars are the bomb!

The Recipe:

Prep Time: 15 Minutes Cook Time: 45 Minutes Total Time: 60 Minutes

Ingredients:

Almond Crust:

1 ½ cup almond flour

¾ cup gluten free baking flour

¼ cup powdered sugar

½ cup melted butter

 

Lemon Filling:

4 eggs

¾ cup granulated sugar

1/3 cup fresh lemon juice (2 lemons)

½ tsp. baking powder

1/3 cup gluten free baking flour


Instructions:

  1. Begin by heating your oven to 350 degrees.
  2. Prepare a 9×13 pan with Pam or non stick grease.
  3. Mix the almond flour, baking flour, powdered sugar, and melted butter in a small bowl with your hands.
  4. Spread the dough onto the pan and bake for 18-20 minutes.
  5. In a separate bowl combine the eggs, sugar, lemon juice, baking powder, and baking flour.
  6. Pour mixture over the crust.
  7. Sprinkle on powdered sugar for cosmetic purposes.
  8. Let cool 10-15 minutes.
